Ingredients:

- 1/2 cup smooth peanut butter
- 2 cups water

Instructions:
- In a large pot or dutch oven, sauté the onions and garlic until fragrant.
- Add the mixed vegetables and continue to cook until they are tender.
- Add the chopped tomatoes and cook until they start to break down and release their juices.
- Add the chopped okra and stir well to combine. Cook for a few minutes until the okra starts to soften.
- Dissolve the stock cubes in 2 cups of water and add to the pot. Bring to a boil.
- Add the smooth peanut butter and stir well to combine. Reduce the heat to low and let simmer for about 15-20 minutes, stirring occasionally.
- Add salt and pepper to taste.
